Pimentón de La Vera is a smoky “paprika” from La Vera in Extremadura, Spain. Paprika is a spice made from dried and ground red peppers.

 

It can be Dulce (Sweet) or Picante (Hot), but it is always smoky—dried traditionally over indirect-heat oak fires for 10 to 15 days, and finished over a slightly warmer fire for three more days. This process takes the ripe peppers to a low percentage of moisture, preserving flavor and color and imbuing them with the classic DOP smokiness.

 

Freshness is key to the flavor profile of this vibrant crimson powder from Las Hermanas, as the peppers—all from local farmers in La Vera with a longstanding relationship to the company—are smoked immediately upon picking. While the oak-fire smokiness is the first thing to hit the palate, the second is a pure, red pepper flavor with a hint of bitterness.
