Italian Easter Colomba Cake, also known as Colomba di Pasqua or “Easter Dove” in English, is a traditional Italian cake that is enjoyed during Easter. It is the perfect counterpart to the famous Italian Christmas desserts, Panettone and Pandoro.
To prepare the Colomba, there are three different stages of leavening involved. The first dough is made with flour, water, milk, and yeast, and it needs to be left to rise for a couple of hours. Then, flour, sugar, and butter are added to the first dough, and it should be raised for an hour and a half. Lastly, the third and final mixture includes flour, butter, raisins, eggs, sugar, salt, vanilla, and oranges, which is added to the previous mixture and left to rise for 16 hours. Once the dough has risen, it is placed into a dove-shaped mold and coated with a delicious icing made of flour, cornstarch, egg whites, and cane sugar. The result is a beautifully shaped cake that is both visually appealing and incredibly tasty.
