The Spanish Oregano is the dried leaves of the herbs Origanum sp (Mediterranean variety) . This variety has traditionally been harvested in the wild. The best quality of oregano is grown in a warm, dry climate and drought conditions can intensify the flavor.
The name Origanum derives from Greek words meaning “joy of the mountain” since oregano thrives in high altitude Mediterranean climates.
CULINARY USES
Mediterranean type oregano is found in much of Mediterranean cuisine: salads, paella, meat, pizza, spaghetti sauces, and other tomato-based sauces.Oregano is one of the few herbs that retains much of its flavor when dried, which is why we call for it in many recipes. Oregano’s aroma compounds are less volatile than those of other herbs, meaning that more remain after the leaves are dried.
